- The Master of French Cuisine, Éric Briffard to Demonstrate Cooking at Le Cordon Bleu-Sookmyung Academy
The world-renowned Chef Eric Briffard, the winner of the Meilleur Ouvrier de France (MOF), visited Le Cordon Bleu-Sookmyung Academy on Fri, Mar. 31 to give a cooking demonstration lecture. Chef Briffard has been the head chef and principal of Le Cordon Bleu Paris since 2018.
Chef Briffard gave a cooking demonstration lecture to about 50 people, including undergraduates and graduates of Le Cordon Bleu-Sookmyung Academy, and general public. He presented two dishes: citrus-scented soft salma salmon, velouté de cresson; and olive oil black lemon sorbet, earl grey espuma.
Chef Briffard had a down-to-earth talk about the chef＇s role and vocation with future chefs who will lead the next generation.
Chef Briffard has garnered attention from the gourmet world while serving as an executive chef of world-famous hotels and Michelin star restaurants.
He was born in Burgundy in central France and started cooking at the age of 14. He has won several Michelin stars, focusing on his own cooking style.
In 1994, he obtained the title of Meilleur Ouvrier de France (MOF). In 2018, Chef Briffard was awarded a Knight in the World Order of the Culinary Academy of France medal and the 2018 Transmission of Knowledge Chef Trophy.
